Ingredients
Scale
Chicken and Seasoning
- 2 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1 tablespoon olive oil
Sandwich Ingredients
- 1 avocado, sliced
- 4 slices cheese (Swiss, cheddar, or provolone)
- 4 slices bread (sourdough, ciabatta, or your choice)
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1 small red onion, thinly sliced
- 1 tomato, sliced
- Butter or olive oil for grilling
Instructions
- Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides. Heat olive oil in a skillet over medium-high heat. Cook chicken for 6-7 minutes per side until fully cooked and no longer pink inside. Remove and let rest a few minutes, then slice thinly.
- Prepare the Avocado and Cheese: Slice the avocado and prepare the cheese slices. Set both aside for assembling.
- Prepare the Bread: Spread a thin layer of mayonnaise and Dijon mustard on each slice of bread evenly.
- Assemble the Sandwiches: On two slices of bread, layer sliced chicken, avocado, and cheese. Add thin slices of red onion and tomato on top. Place the remaining bread slices on top, mayo side down.
- Grill the Sandwiches: Heat a skillet or grill pan over medium heat and add butter or olive oil. Place the assembled sandwiches in the pan and grill for 3-4 minutes per side until bread is golden and cheese melts, pressing gently with a spatula to help melt the cheese evenly.
- Serve: Remove sandwiches from the skillet, let cool for a minute, slice in half, and serve warm.
Notes
- Use your favorite cheese such as Swiss, cheddar, or provolone for different flavor profiles.
- Choose bread types like sourdough or ciabatta for the best texture and taste.
- Feel free to swap mayonnaise for a lighter spread or add hot sauce for a kick.
- Make sure chicken is cooked to an internal temperature of 165°F (74°C) for safety.
- Pressing the sandwich gently while grilling helps the cheese to melt and the sandwich to crisp up uniformly.
