Description

This Chicken Alfredo Lasagna is a comforting and creamy Italian-inspired dish featuring tender lasagna noodles filled with a savory mixture of shredded chicken, ricotta, and cheeses, all smothered in rich Alfredo sauce and baked to perfection. Perfect for a family dinner or special occasion, it combines the classic flavors of Alfredo pasta with the satisfying texture of lasagna rolls.

Ingredients

Scale

Lasagna Noodles

  • 9 lasagna noodles

Filling

  • 2 cups cooked chicken, shredded
  • 1 1/2 cups ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste

Topping and Sauce

  • 2 cups Alfredo sauce
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Garnish

  • Fresh parsley, for garnish

Instructions

  1. Preheat and Prepare Noodles: Preheat your oven to 350°F (175°C). Cook the lasagna noodles in boiling water until al dente, then drain them carefully and set aside to cool slightly.
  2. Make Filling Mixture: In a large bowl, combine the shredded cooked chicken, ricotta cheese, 1/2 cup shredded mozzarella, 1/4 cup Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper. Mix until well blended.
  3. Assemble Rolls: Spread an even layer of the chicken and cheese mixture over each lasagna noodle, then carefully roll them up. Place the rolls seam-side down in a prepared baking dish to keep them intact during baking.
  4. Add Sauce and Cheese: Pour the Alfredo sauce evenly over the rolled noodles. Sprinkle the remaining 1/2 cup mozzarella and 1/4 cup Parmesan cheese on top for a cheesy crust.
  5. Bake Covered: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes to heat through and meld the flavors.
  6. Finish Baking Uncovered: Remove the foil and bake for an additional 10 minutes to allow the cheese to brown slightly and become bubbly.
  7. Garnish and Serve: Once out of the oven, let the dish rest for a few minutes. Garnish with fresh parsley to add a pop of color and freshness before serving.

Notes

  • For extra flavor, use freshly shredded Parmesan cheese instead of pre-grated.
  • Make sure not to overcook the noodles; they should be just al dente as they will continue cooking in the oven.
  • Leftovers keep well and can be reheated in the oven or microwave.
  • You can use rotisserie chicken to save prep time.
  • To make this dish gluten-free, substitute the lasagna noodles with gluten-free noodles.
