Ingredients
Scale
Lasagna Noodles
- 9 lasagna noodles
Filling
- 2 cups cooked chicken, shredded
- 1 1/2 cups ricotta cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
Topping and Sauce
- 2 cups Alfredo sauce
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
Garnish
- Fresh parsley, for garnish
Instructions
- Preheat and Prepare Noodles: Preheat your oven to 350°F (175°C). Cook the lasagna noodles in boiling water until al dente, then drain them carefully and set aside to cool slightly.
- Make Filling Mixture: In a large bowl, combine the shredded cooked chicken, ricotta cheese, 1/2 cup shredded mozzarella, 1/4 cup Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper. Mix until well blended.
- Assemble Rolls: Spread an even layer of the chicken and cheese mixture over each lasagna noodle, then carefully roll them up. Place the rolls seam-side down in a prepared baking dish to keep them intact during baking.
- Add Sauce and Cheese: Pour the Alfredo sauce evenly over the rolled noodles. Sprinkle the remaining 1/2 cup mozzarella and 1/4 cup Parmesan cheese on top for a cheesy crust.
- Bake Covered: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes to heat through and meld the flavors.
- Finish Baking Uncovered: Remove the foil and bake for an additional 10 minutes to allow the cheese to brown slightly and become bubbly.
- Garnish and Serve: Once out of the oven, let the dish rest for a few minutes. Garnish with fresh parsley to add a pop of color and freshness before serving.
Notes
- For extra flavor, use freshly shredded Parmesan cheese instead of pre-grated.
- Make sure not to overcook the noodles; they should be just al dente as they will continue cooking in the oven.
- Leftovers keep well and can be reheated in the oven or microwave.
- You can use rotisserie chicken to save prep time.
- To make this dish gluten-free, substitute the lasagna noodles with gluten-free noodles.
