  • 2 cups fresh spinach, chopped
  • 1/2 cup cream cheese, softened

Instructions

  1. Preheat Oven & Prepare Chicken: Preheat the oven to 375°F (190°C). Carefully slice a pocket into each boneless chicken breast without cutting all the way through to create space for the filling.
  2. Make the Filling: In a medium bowl, mix together the chopped fresh spinach, softened cream cheese, shredded mozzarella, grated Parmesan, minced garlic, and a pinch of salt and pepper until the mixture is smooth and well combined.
  3. Stuff the Chicken: Spoon the cheesy spinach mixture evenly into the pocket of each chicken breast. Use toothpicks to secure the openings if necessary to keep the filling inside during cooking.
  4. Season the Chicken: Rub the exterior of each stuffed chicken breast with olive oil. Then sprinkle evenly with paprika, garlic powder, onion powder, salt, and black pepper for a flavorful crust.
