Description

Mashed Potato Mixture

  • 2 large eggs

  • ¼ cup shredded cheese (Monterey Jack or cheddar)

Instructions

  1. Preheat oven and prepare pan: Preheat your oven to 400°F (200°C) and grease a mini muffin tin thoroughly to prevent sticking.
  2. Mix ingredients: In a large mixing bowl, combine the mashed potatoes, eggs, ¾ cup of shredded cheese, and chopped fresh chives. Season with salt and black pepper to your taste, mixing until well blended.
  3. Fill muffin cups: Spoon the potato mixture evenly into the mini muffin cups, filling each almost up to the top to create uniform puffs.
  4. Add cheese topping: Sprinkle the remaining ¼ cup of shredded cheese over the top of each filled muffin cup.
  5. Bake: Place the muffin tin in the preheated oven and bake for 15 to 20 minutes. Bake until the puffs are golden brown on top and fully set inside.
