Main Ingredients
- 2 cups cooked chicken, shredded or diced
- 1 (12 oz) package egg noodles (or your favorite pasta)
- 1 can (10.5 oz) cream of chicken soup
- 1 cup sour cream
- 1 1/2 cups shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup milk
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Optional Topping
- 1/2 cup crushed potato chips or breadcrumbs (optional, for topping)
- 2 tablespoons melted butter (if using chips for topping)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish with non-stick spray or butter to prevent sticking.
- Cook Noodles: Prepare the egg noodles according to the package directions until al dente, then drain thoroughly and set aside.
- Mix Sauce: In a large bowl, combine cream of chicken soup, sour cream, 1 cup of shredded cheddar cheese, mozzarella cheese, milk, garlic powder, onion powder, salt, and pepper. Stir well until all ingredients are fully incorporated.
- Combine Ingredients: Add the cooked chicken and drained egg noodles to the sauce mixture. Gently fold everything together ensuring noodles and chicken are evenly coated with the cheesy sauce.
- Assemble Casserole: Transfer the mixture to the prepared baking dish and spread it out evenly to create a uniform layer.
- Add Cheese Topping: Sprinkle the remaining 1/2 cup of shredded cheddar cheese over the top of the casserole.
- Prepare Optional Topping: If using potato chips, mix the crushed chips with melted butter and sprinkle this over the cheese layer. Alternatively, sprinkle breadcrumbs on top.
- Bake: Place the casserole in the oven and bake for 25 to 30 minutes, until the casserole is heated through, bubbly, and the top is golden brown.
- Rest and Serve: Remove from oven and allow the casserole to cool for a few minutes before serving, enhancing flavor and texture.
Notes
- You can substitute cooked rotisserie chicken to save time.
- For a healthier option, use reduced-fat cheese and sour cream.
- Potato chip topping adds a crunchy texture; breadcrumbs can be used as a lighter alternative.
- Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
- For extra flavor, add chopped parsley or green onions as a garnish before serving.
