Dough & Finishing
- 1 can refrigerated crescent roll dough or puff pastry (8-count)
- 1 egg, beaten (for egg wash)

Instructions
- Preheat and Prepare Baking Sheet: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking and ensure even baking.
- Sauté Vegetables: Heat olive oil in a skillet over medium heat. Add the finely chopped onion, zucchini, carrot, and bell pepper, sautéing for 4 to 5 minutes until the vegetables soften. Stir in the chopped spinach and cook for an additional minute until wilted. Season the mixture with garlic powder, Italian seasoning, salt, and pepper, then remove from heat and let it cool slightly.
- Assemble Rolls: Unroll the crescent roll dough and separate it into 8 triangles (or cut puff pastry into 8 rectangles if using). Place a spoonful of the cooled vegetable mixture onto the wide end of each dough piece, then sprinkle with shredded mozzarella and grated Parmesan cheese. Gently roll up each piece, starting at the wide end, and place the rolls seam-side down on the prepared baking sheet.
- Apply Egg Wash and Bake: Brush the top of each roll with the beaten egg to promote browning and a shiny finish. Bake in the preheated oven for 15 to 18 minutes, or until the rolls are golden brown and puffed up.
