Description

A delicious and nutritious take on classic banana split flavors in a convenient overnight oats format. This recipe combines creamy oats soaked overnight with yogurt, chia seeds, and vanilla, topped with caramelized bananas, fresh strawberries, pineapple, chocolate chips, and crunchy nuts for a delightful breakfast treat.

Ingredients

Scale

Overnight Oats Base

  • 1 cup old-fashioned rolled oats
  • 1 cup milk (dairy or non-dairy)
  • 1/2 cup plain or vanilla Greek yogurt
  • 1 tablespoon chia seeds
  • 1 teaspoon vanilla extract
  • 1 tablespoon maple syrup or honey

Toppings

  • 1 banana, sliced
  • 1 teaspoon butter or coconut oil
  • 1 teaspoon brown sugar
  • 1/4 cup chopped strawberries
  • 2 tablespoons crushed pineapple (drained)
  • 1 tablespoon mini chocolate chips
  • 1 tablespoon chopped walnuts or pecans

Instructions

  1. Prepare the Overnight Oats Base: In a mason jar or airtight container, combine rolled oats, milk, Greek yogurt, chia seeds, vanilla extract, and maple syrup or honey. Stir thoroughly to mix all ingredients evenly. Cover the container and refrigerate overnight or for at least 4 hours to allow the oats and chia seeds to absorb the liquid and soften.
  2. Caramelize the Banana: Heat butter or coconut oil in a skillet over medium heat. Arrange banana slices evenly in the skillet and sprinkle brown sugar on top. Cook each side for 1 to 2 minutes or until the bananas turn golden and caramelized. Remove from heat and allow them to cool slightly.
  3. Assemble the Banana Split Overnight Oats: When ready to serve, retrieve the oats from the refrigerator. Top the soaked oats with the caramelized banana slices, chopped strawberries, crushed pineapple, mini chocolate chips, and chopped walnuts or pecans. Enjoy immediately, either cold or at room temperature.

Notes

  • You can caramelize the bananas fresh in the morning or prep them ahead of time and store separately to save time.
  • Use dairy-free yogurt and milk to make this recipe vegan-friendly.
  • For a nut-free version, omit the walnuts or pecans and substitute with seeds like pumpkin or sunflower.
  • Adjust sweetness by varying the amount of maple syrup or honey according to taste.
