Instructions
- Prepare Soy Milk Mixture: Pour 2 cups of soy milk into a large measuring cup. Add 1 tablespoon of butterfly pea powder and whisk thoroughly until the powder fully dissolves and the milk turns a vibrant blue color.
- Add Chia Seeds and Flavorings: Stir in ½ cup chia seeds, 1 tablespoon maple syrup, 1 teaspoon vanilla extract, and a pinch of salt. Whisk vigorously to combine all ingredients evenly.
- Rest and Whisk: Let the mixture sit for 2 minutes then whisk again to prevent clumping. Wait another 2 minutes and whisk once more to ensure chia seeds are evenly dispersed.
- Refrigerate Overnight: Transfer the mixture to a sealed container and place in the fridge overnight (or at least 2 hours) to allow the chia seeds to absorb the liquid and create a pudding-like texture.
- Assemble Parfaits: When ready to serve, divide the chia pudding evenly into 2 to 3 jars or glasses. Layer with your favorite yogurt, granola, and fresh fruit on top for a delicious parfait.
