Description

This Buffalo Chicken Grilled Cheese recipe combines tender shredded chicken tossed in spicy buffalo sauce with creamy blue cheese mixture, all melted between buttery toasted sandwich bread. Ready in just 20 minutes, it’s a flavorful and comforting twist on classic grilled cheese, perfect for a quick lunch or dinner.

Ingredients

Scale

Cheese Mixture

  • 4 oz Cream Cheese, softened
  • 4 tbsp Crumbled Blue Cheese
  • ½ tsp Paprika
  • 1 tsp Ground Black Pepper
  • ¼ tsp Cayenne Pepper (Optional)

Chicken Mix

  • 2 Cups Cooked Chicken Breasts, shredded
  • ½ Cup Franks Hot Sauce
  • ½ Cup Homemade Ranch Dressing or your favorite store-bought brand
  • 2 tsp Minced Garlic

Sandwich Assembly

  • 8 Slices Sandwich Bread
  • 4-8 Slices Muenster Cheese
  • 4 tbsp Butter

Instructions

  1. Prepare Cheese Mixture: In a small bowl, combine softened cream cheese, crumbled blue cheese, paprika, ground black pepper, and cayenne pepper if using. Mix well and set aside to allow flavors to meld.
  2. Mix Chicken: In another bowl, toss the shredded cooked chicken with Franks hot sauce, ranch dressing, and minced garlic until the chicken is thoroughly coated with the spicy and creamy mixture.
  3. Assemble Sandwiches: Butter one side of each slice of sandwich bread. On the unbuttered side of four slices, spread the prepared cheese mixture evenly. Layer the buffalo chicken mixture on top of the cheese, then place slices of Muenster cheese over the chicken. Close each sandwich with the remaining bread slices, buttered side facing out.
  4. Grill Sandwiches: Heat a skillet over low heat. Place the sandwiches in the skillet and cook slowly until the bread is golden brown and crispy, about 4-5 minutes per side, and the cheese is melted inside. Flip carefully to ensure even toasting.
  5. Serve: Remove sandwiches from the skillet and let rest for a minute. Serve warm with extra buffalo sauce, ranch dressing, or blue cheese dressing on the side for dipping.

Notes

  • Using cooked chicken breasts ahead of time speeds up preparation.
  • Adjust cayenne pepper quantity to control the spiciness.
  • Butter the bread generously for a crispy, golden crust.
  • Low heat grilling ensures cheese melts evenly without burning the bread.
  • Customize with different cheeses like cheddar or pepper jack for variation.
