- Prepare Chicken Cutlets: Cut the chicken breasts in half lengthwise to make 4 thinner cutlets. Season both sides evenly with garlic powder, salt, and pepper to enhance flavor.
- Cook Chicken: Heat olive oil and butter in a skillet over medium-high heat. Add the seasoned chicken cutlets and cook until golden brown on both sides and cooked through, reaching an internal temperature of 165°F. Transfer the cooked chicken to a plate to rest.
- Sauté Onions: In the same skillet, add the chopped onions. Sauté until they are softened and lightly browned, adding a splash more olive oil if the pan seems dry to prevent sticking and ensure even cooking.
- Make Boursin Sauce: Pour the chicken broth into the skillet with the onions. Stir in the softened Boursin cheese until it melts and the sauce becomes smooth. Let it simmer gently for about 5 minutes so the sauce can thicken slightly, stirring occasionally.
