Description

Bluegrass BBQ Chicken is a flavorful grilled chicken recipe featuring a tangy and slightly spicy marinade made from Worcestershire sauce, apple cider vinegar, horseradish mustard, and spices. The chicken breasts are marinated for 8 hours to absorb the bold flavors and then grilled to juicy perfection, making it a perfect dish for summer barbecues or casual dinners.

Ingredients

Scale

Marinade Ingredients

  • ¾ cup Worcestershire sauce
  • ½ cup water
  • ½ cup apple cider vinegar
  • 1 Tbsp sugar
  • 1 tsp chili powder
  • ½ cup butter
  • ½ cup horseradish mustard
  • 2 tsp salt (or to taste)
  • Black pepper (to taste)

Chicken

  • 6 boneless skinless chicken breasts (pounded to an even thickness)

Instructions

  1. Make the marinade: Combine Worcestershire sauce, water, apple cider vinegar, sugar, chili powder, butter, horseradish mustard, salt, and black pepper in a medium saucepan. Bring the mixture to a boil, stirring occasionally to dissolve the sugar and meld the flavors. Once boiling, remove from heat and allow the marinade to cool completely.
  2. Marinate the chicken: Place the pounded chicken breasts in a large ziplock bag. Pour the cooled marinade over the chicken, seal the bag tightly, and refrigerate for 8 hours. This allows the chicken to soak up the tangy and spicy flavors thoroughly.
  3. Grill the chicken: Remove the chicken breasts from the marinade and discard the excess liquid. Preheat your grill to medium-high heat. Grill the chicken breasts for about 8 minutes on each side or until they are fully cooked through and reach an internal temperature of 165°F (74°C). Let the chicken rest a few minutes before serving.

Notes

  • Make sure to pound the chicken breasts to an even thickness for uniform cooking.
  • Marinating the chicken overnight will deepen the flavor even more.
  • Monitor the grill closely to avoid overcooking and drying out the chicken.
  • This marinade can also be used with pork or beef for a similar tangy BBQ flavor.
