Description

These Black Bean Sweet Potato Tacos are a delicious and satisfying vegetarian meal. Roasted sweet potatoes, seasoned black beans, and fresh toppings are wrapped in warm tortillas for a flavorful taco experience.

Sweet Potatoes:

  • 2 medium sweet potatoes (peeled and diced)
  • 1 tablespoon olive oil
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon salt

Other Ingredients:

  • 1 (15 oz) can black beans (drained and rinsed)
  • 8 small corn or flour tortillas
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 1 avocado (sliced)
  • juice of 1 lime
  • optional toppings: crumbled feta or cotija cheese, salsa, sour cream

Instructions

  1. Preheat the oven: Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Prepare sweet potatoes: Toss diced sweet potatoes with olive oil, chili powder, cumin, smoked paprika, garlic powder, and salt. Roast for 25-30 minutes until tender and caramelized, flipping halfway through.
  3. Warm black beans: Heat black beans in a saucepan over low heat.
  4. Warm tortillas: Heat tortillas in a skillet or in the oven.
  5. Assemble tacos: Fill tortillas with sweet potatoes, black beans, red onion, cilantro, avocado, and lime juice. Add optional toppings. Serve hot.
