Instructions
- Preheat the Oven: Preheat your oven to 350°F and line baking sheets with parchment paper.
- Cream Butter and Sugars: In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
- Add Eggs and Vanilla: Beat in the eggs one at a time, then add the vanilla extract.
- Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon. Gradually mix the dry ingredients into the wet mixture.
- Stir in Oats and Extras: Stir in the oats, and if using, add raisins or chocolate chips and nuts.
- Bake: Scoop tablespoon-sized portions of dough onto the prepared baking sheets. Bake for 10–12 minutes, or until the edges are golden and the centers are still soft.
- Cool and Enjoy: Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
- For chewier cookies, slightly underbake and cool on the pan.
- Swap raisins for dried cranberries or use both chocolate chips and nuts for extra texture.
