- Brown the Beef: In a large skillet, heat olive oil over medium heat. Add the ground beef, season with salt, pepper, and taco seasoning, and cook until browned and fully cooked through, about 5 to 6 minutes. Drain excess grease if needed to keep the dip from being greasy.
- Sauté Aromatics: Add the finely diced onion and minced garlic to the skillet. Cook for 2 to 3 minutes until the onion softens and becomes translucent, enhancing the flavor base of the dip.
- Make the Base: Sprinkle the all-purpose flour evenly over the beef mixture and stir to combine thoroughly. Slowly whisk in the whole milk and half-and-half, stirring constantly until the mixture is smooth and slightly thickened, about 3 to 5 minutes.
- Melt the Cheese: Reduce the heat to low. Gradually add the shredded white American cheese and cheddar cheese to the skillet, stirring continuously until all the cheese has melted and the mixture is creamy.
- Add Tomatoes and Seasoning: Stir in the drained diced tomatoes with green chiles along with the ground cumin. Mix well to ensure all ingredients are evenly incorporated.
