Ingredients
Scale
For the crust:
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
For the filling:
- 1 (8 oz) package cream cheese, softened
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 4 medium ripe bananas, sliced
- 1 (20 oz) can crushed pineapple, drained
- 1 (8 oz) container whipped topping (like Cool Whip)
- 1/2 cup chopped strawberries or maraschino cherries (optional)
- 1/2 cup chopped walnuts or pecans
- Chocolate syrup for drizzling
Instructions
- Prepare the crust: In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter until well mixed. Press the mixture firmly into the bottom of a 9×13-inch baking dish to form an even crust layer.
- Make the filling: In a separate bowl, beat together the softened cream cheese, softened butter, and powdered sugar using a mixer until the mixture becomes smooth and fluffy.
- Assemble layers: Spread the cream cheese filling evenly over the graham cracker crust. Then layer the sliced bananas evenly over the filling, followed by an even layer of crushed pineapple.
- Add whipped topping: Spread the whipped topping evenly over the fruit layers to cover completely.
- Top with nuts and fruit: Sprinkle chopped walnuts or pecans evenly on top along with the optional chopped strawberries or maraschino cherries, if using. Drizzle chocolate syrup over the entire cake as a decorative and flavorful finish.
- Chill to set: Refrigerate the assembled cake for at least 4 hours, preferably overnight, to allow the layers to set and flavors to meld. This will also firm up the cream cheese layer.
- Serve: Slice the chilled cake into 12 pieces and serve cold for a refreshing, flavorful dessert.
Notes
- Use fresh pineapple if desired, but be sure to drain it well to prevent sogginess.
- You can substitute whipped topping with homemade whipped cream if preferred.
- Best enjoyed within 2–3 days of assembling to prevent bananas from browning.
