Description

This Banana Split Cake is a delightful no-bake dessert that layers a crunchy graham cracker crust with a creamy, sweet filling topped with fresh bananas, crushed pineapple, and whipped topping. Finished with nuts, optional berries or cherries, and a drizzle of chocolate syrup, this chilled cake captures the flavors of a classic banana split in an easy, make-ahead treat perfect for summer or any special occasion.

Ingredients

Scale

For the crust:

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar

For the filling:

  • 1 (8 oz) package cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 4 medium ripe bananas, sliced
  • 1 (20 oz) can crushed pineapple, drained
  • 1 (8 oz) container whipped topping (like Cool Whip)
  • 1/2 cup chopped strawberries or maraschino cherries (optional)
  • 1/2 cup chopped walnuts or pecans
  • Chocolate syrup for drizzling

Instructions

  1. Prepare the crust: In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter until well mixed. Press the mixture firmly into the bottom of a 9×13-inch baking dish to form an even crust layer.
  2. Make the filling: In a separate bowl, beat together the softened cream cheese, softened butter, and powdered sugar using a mixer until the mixture becomes smooth and fluffy.
  3. Assemble layers: Spread the cream cheese filling evenly over the graham cracker crust. Then layer the sliced bananas evenly over the filling, followed by an even layer of crushed pineapple.
  4. Add whipped topping: Spread the whipped topping evenly over the fruit layers to cover completely.
  5. Top with nuts and fruit: Sprinkle chopped walnuts or pecans evenly on top along with the optional chopped strawberries or maraschino cherries, if using. Drizzle chocolate syrup over the entire cake as a decorative and flavorful finish.
  6. Chill to set: Refrigerate the assembled cake for at least 4 hours, preferably overnight, to allow the layers to set and flavors to meld. This will also firm up the cream cheese layer.
  7. Serve: Slice the chilled cake into 12 pieces and serve cold for a refreshing, flavorful dessert.

Notes

  • Use fresh pineapple if desired, but be sure to drain it well to prevent sogginess.
  • You can substitute whipped topping with homemade whipped cream if preferred.
  • Best enjoyed within 2–3 days of assembling to prevent bananas from browning.
