Instructions
- Season the chicken: Season both sides of the chicken breasts with salt, pepper, and Italian seasoning to ensure they are well flavored.
- Sear the chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 4–5 minutes per side until golden brown and cooked through. Remove the chicken from the skillet and set it aside.
- Sauté garlic and tomatoes: In the same skillet, add minced garlic and cook for 30 seconds until fragrant. Then add the cherry tomatoes and cook for 3–4 minutes until they start to soften and burst.
- Add balsamic glaze: Stir in balsamic vinegar and honey, scraping up any browned bits from the bottom of the pan. Let the sauce simmer for 2–3 minutes to thicken slightly.
- Combine and heat through: Return the chicken to the skillet, spoon the sauce over the top, and cook for an additional 2 minutes to heat the chicken through and meld the flavors.
- Garnish and serve: Sprinkle chopped fresh basil over the dish and serve hot. This pairs wonderfully with pasta, rice, or crusty bread.
