Instructions

  1. Season the chicken: Season both sides of the chicken breasts with salt, pepper, and Italian seasoning to ensure they are well flavored.
  2. Sear the chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 4–5 minutes per side until golden brown and cooked through. Remove the chicken from the skillet and set it aside.
  3. Sauté garlic and tomatoes: In the same skillet, add minced garlic and cook for 30 seconds until fragrant. Then add the cherry tomatoes and cook for 3–4 minutes until they start to soften and burst.
  4. Add balsamic glaze: Stir in balsamic vinegar and honey, scraping up any browned bits from the bottom of the pan. Let the sauce simmer for 2–3 minutes to thicken slightly.
  5. Combine and heat through: Return the chicken to the skillet, spoon the sauce over the top, and cook for an additional 2 minutes to heat the chicken through and meld the flavors.
  6. Garnish and serve: Sprinkle chopped fresh basil over the dish and serve hot. This pairs wonderfully with pasta, rice, or crusty bread.
