Description

A vibrant and crunchy Autumn Chopped Salad featuring Romaine and Spring Mix lettuces, crisp apples, dried cranberries, candied pecans, crispy bacon, and creamy Feta cheese, all tossed together and finished with a luscious creamy poppy seed dressing. Perfect as a light lunch or a festive side dish during fall gatherings.

Ingredients

Scale

Salad

  • 8 cups chopped Romaine lettuce
  • 2 cups Spring Mix lettuce
  • 2 small Red delicious or Gala apples, sliced thin
  • 1 cup dried cranberries
  • 1 cup chopped candied pecans
  • 8 slices bacon, crisp-cooked and crumbled
  • 4 ounces Feta cheese, crumbled

Dressing

  • Creamy Poppy Seed salad dressing, as desired

Instructions

  1. Prepare Salad Ingredients: In a large bowl, combine chopped Romaine lettuce, Spring Mix lettuce, thinly sliced apples, dried cranberries, chopped candied pecans, crisp-cooked and crumbled bacon, and crumbled Feta cheese. Toss well to mix all ingredients evenly.
  2. Serve the Salad: Divide the mixed salad among individual salad bowls. Drizzle each serving with your desired amount of creamy poppy seed dressing just before serving for optimal flavor and freshness. Enjoy immediately.

Notes

  • If preferred, substitute the bacon with turkey bacon for a leaner option.
  • Use fresh cranberries if preferred, but dried cranberries add a better chewy sweetness.
  • Candied pecans can be replaced with walnuts or almonds for a different nutty texture.
  • Make sure to toss the salad gently after adding dressing to avoid bruising the delicate greens and apples.
  • To save time, purchase pre-cooked bacon or prepare bacon a day ahead and store in the refrigerator.
