Description

Almond croissants are buttery, flaky pastries filled with a sweet almond cream and topped with sliced almonds and powdered sugar. Made using store-bought croissants and a quick homemade frangipane filling, these bakery-style treats are incredibly easy to make at home and perfect for breakfast, brunch, or dessert.

Almond Cream (Frangipane)

  • 1/2 cup unsalted butter (softened)
  • 1/2 cup granulated sugar
  • 1 cup almond flour (finely ground almonds)
  • 2 large eggs
  • 1 teaspoon almond extract
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Topping

  • 1/4 cup sliced almonds
  • Powdered sugar (for dusting)
  • Optional: 1/4 cup simple syrup (for brushing)


Instructions

  1. Preheat Oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper to prepare for baking.
  2. Make Almond Cream: In a bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, mixing thoroughly after each addition. Then fold in the almond flour, almond extract, vanilla extract, and salt until the mixture forms a smooth almond cream (frangipane).
  3. Prepare Croissants: Optionally, brush each croissant lightly with simple syrup to add moisture and sweetness. Slice each croissant in half horizontally, being careful not to break them.
  4. Fill Croissants: Spread a generous spoonful of the almond cream inside the bottom half of each croissant. Close the croissants and spread a little more almond cream on top of each one.
  5. Add Topping: Sprinkle the tops of the croissants with sliced almonds evenly to add texture and nutty flavor.
  6. Bake: Place the filled croissants on the prepared baking sheet and bake for 15–18 minutes until golden brown and crisp on top.
  7. Cool and Serve: Let the croissants cool slightly, then dust with powdered sugar. Serve warm or at room temperature for the best flavor and texture.

  • Using day-old croissants helps them hold their shape and absorb flavor better.
